Ciulama Chicken is a Romanian recipe similar to the Hungarian chicken paprikash found here however the style and process is different. This recipe found bellow is a modified version of the one given by my friend Catalina. Adjusted so it be easier to follow.
Ingredients
1 kg of chicken ( with bone or without)
4 tablespoons of flour
2 onions
3 carrots
4 tablespoons of sour cream
2 green/red pepper
300 ml milk
100ml oil
Parsley
Freshly ground Pepper (add to taste)
3 tablespoons Paprika
Salt
Directions
Clean and cut the chicken as well as the onions, peppers and any other ingredients you may use. Cook the chicken in salted water until it starts to boil. Remove any filth that may appear at the top. Add your carrots, peppers and onions. Cook until everything is done. In a separate pan, add the flour, milk and sour cream. Stir until everything is combined. Add 2 tablespoons of water from the pot used to cook the chicken etcetera into the pan. Drain the water from the pot. Remove from stove. Once sauce is done, add the sauce to the pot. Add pepper, and paprika to taste. Mix together under low heat. At end, liberally add parsley.
Enjoy!
